Breakfast. It's necessary, and I need to make sure I have some tomorrow. And I'm craving beer bread.

Perusing the internets to attempt to find a recipe, I found a nice recipe for apricot beer bread that used apricot ale and dried apricots. We have a cranberry lambic from a case of Sam Adams seasonal brews I'd picked up before last weekend's Twelfth Night event, and almost always have dried cranberries in the house, so it seems a nice switch. Cranberry Beer Bread

3 c flour
2 tsp baking powder
0.5 tsp salt
0.5 c sugar
3 tbsp vegetable oil
12 oz cranberry lambic
0.5 c dried cranberries

Preheat oven to 180ºC/350ºF and lightly grease a loaf pan.

In very large bowl, whisk together dry ingredients. Stir in cranberries. Make a well in the centre and add vegetable oil and beer. Stir just until no streaks of flour remain. Pour batter into prepared pan.

Bake 55-60 minutes, until top springs back when lightly pressed. Turn out of the pan and allow to cool on wire rack.

John Denver? I loved his stuff in high school...I didn't figure you for the jd type.

Go figure.

The bread sounds wonderful. I wonder if we could bake it at Pennsic? Hm-m-m...would the batter be good for pancakes?

My parents liked John Denver. I have happy memories of his songs.

Would be easy enough to do at Pennsic, provided we had a larger bowl than I normally bring, because the beer foams something frightening. It'd be a little on the dense side for pancakes, I think. I wonder about adding a little milk to the batter, though.
